About the Recipe
This a staple in my home because it’s easy, delicious, yet nutritious and never goes to waste. I usually don’t enjoy leftovers, but I’m always excited to have this for lunch the next day!
Ingredients
Ingredients:
1.5 lb ground turkey 85% lean
Sprinkle of salt, pepper, and paprika
2 tbsp olive oil
1 box of precooked quinoa
1 small can of crushed tomatoes
6 bell peppers
1/4 cup of shredded cheddar cheese
Preparation
Directions:
In a large skillet, heat olive oil until sizzling and add ground turkey
Season meat with paprika, salt and pepper
While the meat is browning, prep your veggies - Clean and cut peppers in half lengthwise
Line a casserole dish with parchment paper and place peppers side by side
Add quinoa and can of tomatoes to the browned meat on low-medium simmer until fully combined
Scoop mixture into each pepper until full
sprinkle each pepper with cheese on top
bake at 375 for 30 min
